Ingredients

1 lb chicken breast, cubed

8 ½ oz jar of sundried tomatoes (2 tbsp of the oil reserved)

12 oz jar of roasted artichokes

¼ to ½ cup kalamata olives

1 red onion, cubed

2 zucchinis, cubed

4 tsp minced garlic

1 tsp salt

½ cup feta cheese, crumbled (optional)

 

Directions

Preheat oven to 425°

  1. Slice olives and artichokes in half.
  2. Mix all ingredients (except feta cheese) and add to a 9×13 baking dish.
  3. Bake for 25-30 minutes.
  4. Top with fresh crumbled feta and enjoy!
