This tasty Greek Chicken dish is perfect for a busy weeknight or when you just want all the flavors of the Mediterranean wrapped into one simple, quick, low-carb dish! Grain-free and dairy-free, this all-in-one meal is sure to become one of your go-to recipes!
Ingredients
1 lb chicken breast, cubed
8 ½ oz jar of sundried tomatoes (2 tbsp of the oil reserved)
12 oz jar of roasted artichokes
¼ to ½ cup kalamata olives
1 red onion, cubed
2 zucchinis, cubed
4 tsp minced garlic
1 tsp salt
½ cup feta cheese, crumbled (optional)
Directions
Preheat oven to 425°
- Slice olives and artichokes in half.
- Mix all ingredients (except feta cheese) and add to a 9×13 baking dish.
- Bake for 25-30 minutes.
- Top with fresh crumbled feta and enjoy!
Tip: This dish pairs nicely with rice or pasta.
