grain-free granola
Enjoy this simple grain-free granola made with an assortment of nuts and seeds. Lightly sweet and crunchy, this gluten-free granola makes a delicious topping for yogurt or as a simple snack.
Ingredients
1 cup almonds, chopped
1 cup pecans, chopped
1 cup walnuts, chopped
1 cup cashews, chopped
1/3 cup pumpkin seeds
1/3 cup chia seed
1/3 cup flax seed
6 tbsp maple syrup
¼ cup almond butter
1 tsp vanilla
Instructions
- In a large bowl, combine all the nuts and seeds. In a separate bowl, mix the maple syrup, almond butter and vanilla. Add this to the nut mixture and stir until thoroughly combined.
- Line a baking sheet with parchment. Spread the mixture out and bake at 325° for 15-18 minutes. Remove from oven and let it cool completely before breaking it into chunks.
- Store in a sealed dry container. Enjoy as cereal with milk, topping for yogurt, or simply as a crunchy snack.
