Fried Rice
I make this so often when the grandkids unexpectedly come over because it is so delicious, and I almost always have these ingredients on hand in my pantry or fridge. So the other day, I told Brittany I had some left over fried rice that I would send home with her… and she loved it too! Really, who doesn’t love fried rice? It has always been one of my go-to quick and easy main dishes that never fails to please.
Ingredients:
- 2 cups uncooked brown rice (or for a quick and easy version, use the frozen brown rice from Trader Joe’s, and heat according to the package directions.)
- 2 tablespoons light soy sauce
- 3 large beaten eggs
- 2 tablespoons peanut or vegetable oil
- 1 cup baby peas (or edamame works well too!)
- 1/2 onion, cut in small dice
- 3 sliced green onions (reserve a small amount to use for a garnish.)
- 1 cup crumbled fried bacon. I often use bacon because I usually have some on hand. You could also substitute some left over diced, cooked chicken, pork, or shrimp.
- A few drops of sesame oil (but this isn’t necessary if you don’t have it . . . but if you do, it does add a very special touch!!)
Directions:
- (Skip first two steps if you are using the precooked rice from Trader Joe’s.) Rinse your rice a few times in cold water and drain well. A general rule of thumb is 2 parts water to 1 part rice. Add a good pinch of salt.
- Bring your rice and water to a boil over high heat and then reduce heat to medium-low; cover and cook for approximately 35 minutes until the rice is tender and the water is fully absorbed. Fluff with a fork and allow to cool.
- Heat a small non-stick skillet to medium-high and then add 1/2 teaspoon of the oil. Add the beaten eggs to the skillet, scrambling them until they are cooked through, but not overcooked. Set them aside in a bowl.
- Heat the vegetable oil in a large frying pan over medium heat. When the skillet is hot, sauté the onions, until they are translucent, add the scallions, peas (or edamame), and continue to cook for about another minute. Stir in the rice, the soy sauce and a few drops of sesame oil. Keep stirring until the rice is heated through. Add your bacon (or other meat) with the eggs to the skillet, and combine with the rice mixture until warmed through. Plate and garnish with the reserved scallions.

Thank you for sharing this recipe. I have made fried rice several times....but your recipe showed me what I was doing wrong. (Adding my eggs too soon for one thing) also using bacon when one doesn't have chicken..etc. I have grandbabies too....aren't they the very best gift from God?) I will be making your recipe soon. Sounds great! Pictured are carrots/red pepper/flat leaf parsley..are these garnishment?

Yes, the peppers and parsley are used as garnish in the photo. Diced carrots can be added with the onion, if you like. It's a very flexible dish!
