Dark Chocolate Avocado Cookies
Dark chocolate avocado cookies are so easy to make and are simply delicious. There is no dairy (depending on the chocolate chips you choose), no soy, and no gluten. How can this be? The answer: avocado. It acts as a binder and a fat. Don’t worry—it’s a healthy fat of course!
Ingredients:
- 1/2 cup mashed avocado
- 1/2 cup coconut sugar
- 1 egg
- 1/2 cup dark cocoa powder
- 1/4 cup dark chocolate chunks
- 1/2 teaspoon baking soda
Method:
Preheat oven to 350 F.
- Mix together the coconut sugar, avocado, and egg using an electric mixer or blender. It’s important to make sure everything is well blended. If you used a blender, scoop the contents into a bowl.
- Add cocoa powder and baking soda; stir until mixed.
- Now the best part: stir in chocolate chips.
- Line a baking sheet with parchment paper, silpat, or oil.
- Form cookies by dropping a small spoonful of dough onto the baking sheet.
- Bake for 8–10 minutes.
- Remove from the oven and let them cool on a rack.
- Enjoy!

I was like, what avocado ewww, don't get me wrong I love avocado,
but not in cookies. But hey, they look so yummy. I'm gonna give them a try.

I made these yesterday, and they were awesome! They're moist, creamy and so good! I cooked mine for 7 minutes since I like super soft cookies. I shared the small batch at work with gluten intolerant friends, and they all loved them and wanted the recipe too :) . Hopefully when checking out the recipe, they'll start checking out the rest of the Harvest site! Thank you so much for sharing these.
