Chimichurri Sauce
This is a great sauce to add to meat and potatoes.
My dad is from Budapest, Hungary and I traveled there with him a few years ago. On all the tables of restaurants and friends and family sat salt, pepper, and paprika. Paprika is a staple condiment there.
It’s is a spice made from ground bell peppers or chili peppers. It lends a bright color to dishes
and a sweet flavor.
In my chimichurri sauce, I add smoked paprika. You can buy smoked paprika at Trader Joe’s.
3–4 garlic cloves, sliced thin or minced
1 teaspoon of smoked paprika
1 tablespoon of salt
1 tablespoon of pepper
1 tablespoon of honey
3 tablespoons of red wine vinegar
2 tablespoons of lemon
3/4 cup of olive oil
2 tablespoons of onion/chives
1 tablespoon of chopped fresh oregano leaves
1 tablespoon of chopped fresh basil leaves
1 cup of chopped flat leaf parsley
1 red jalapeno, finely chopped
Place all ingredients in a food processor and pulse until well chopped, but not pureed.
Spoon your sauce over meat and potatoes. Enjoy!
