Chicken Soup for the Soul
I love to make homemade chicken noodle soup. I start with some whole organic chicken and boil my own broth, then add my favorite root vegetables and brown up some noodles. The taste is just so satisfying!
2 Corinthians 1:4 says, “He comforts us in all our troubles so that we can comfort others. When they are troubled, we will be able to give them the same comfort God has given us” (NLT).
So why not give the gift of some homemade chicken soup with a sweet scripture to a friend who is sick? Here is a simple and pretty way to do that!
Ingredients:
- 1 large canning jar (2-quart size)
- 4 cups of chicken broth
- 2 cups of shredded chicken
- 2 cups of noodles, uncooked
- 2 cups of your favorite root veggies, chopped in equal sized pieces (I like carrots, celery, parsnips, rutabagas, turnips, and potatoes.)
- Some fresh herbs, like thyme and rosemary
Directions:
- Start by filling your jar halfway with chicken broth and 2 cups of shredded chicken.
- Brown your veggies (but don’t cook through) in 1 tablespoon of olive oil in a pan, then add them to your chicken stock.
- Add a stalk of rosemary and some fresh thyme sprigs or other herbs of your choice.
- Now, over medium-high heat, quickly brown your noodles in a pan with 1 tablespoon of olive oil, and place them in a separate container.
- Tie up with a spoon and scripture and these directions:
Place all contents in a large pot and bring to boil. Cook for 6 minutes or until noodles are soft but not mushy. Enjoy!
