Ingredients:

  • 1 cooked large chicken breast (I baked mine in the oven with lemon juice, olive oil and salt and pepper.)
  • 1 shredded carrot
  • 1/2 cup toasted cashews
  • 1/2 cup chopped pineapple, drained
  • 4 tablespoons finely chopped green onions
  • 2 tablespoons cilantro
  • 3 tablespoons leftover Chinese chicken salad dressing (see Chinese Chicken with Mango salad recipe)
  • 1/4 cup mayonnaise
  • salt and pepper to taste
  • 6 croissants

Directions:

  1. Chop chicken into small cubes and mix together with the carrot, cashews, pineapple, green onions, and cilantro.
  2. Then stir together the dressing and mayonnaise and add to salad mixture.
  3. Add salt and pepper to taste
  4. Cut croissant in half. Place a lettuce leaf on the bottom of the croissant and top with a scoop of the chicken salad.

If you desire you could mix together a little extra salad dressing mixture and spread lightly on the croissant beforehand. Makes approximately 6 small croissant sandwiches. I’ve served these at many a birthday lunch, but I’ve recently updated the recipe a little bit. Hope you enjoy!
