Chicken and Date Salad
This salad is so filling even the macho-est of men can be sufficiently filled on it! It is definitely a pleaser for supper and has the perfect combination of sweet dates with roasted chicken and other goodies. The bulk of ingredients really make this salad!
For the dressing:
This dressing can also be used on any green salad as the herbs make it light and delicious on everything!
- 1/4 cup spicy brown mustard
- 1/2 cup lemon juice
- 1/8 cup champagne vinegar
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons minced garlic
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 1/2 cups extra-virgin olive oil
For the salad:
- A handful of cornbread croutons — To make these, I cook up a batch of cornbread (usually the bag from Trader Joe’s, but use your favorite) with an added can of chopped mild Ortega chilies. When this is cooked and cooled, I cube and bag in sealable bags in handful portions, and freeze. Then, when I’m in need of my specialty croutons, I defrost them and bake them at 350 F with drizzled butter, and some coarse sea salt and pepper, turning frequently till browned! They are a must!
- 3 cups baby lettuce
- 1 cup rotisserie chicken, chopped
- 1/2 cup grape tomatoes
- 2 green onions, sliced thin
- About 8 dates, roughly chopped
- 1 ear of corn, fresh and cut raw
- 1 avocado, sliced
- 1/2 cup almonds, roasted and chopped
- Sprinkle of goat cheese
Toss the lettuce in dressing, then add ingredients (and a little more dressing if you’d like) and serve!

Sounds lovely Brittany! I wish we had Trader Joe's here in Australia :) It seems to be the 'go to' place for foodies in the U.S. :)

This is one of my favorite salads. The croutons are so much fun, and the dates mixed with the dressing - wow! Thanks for this recipe. I'm loving your recipies and my sister-in-law and I are doing one of your archived bible studies, just to keep committed to the Word this summer. It's a slower pace than we do with BSF over the school year.
