Cheesy Smashed Cauliflower
Packed with nutrients, this smashed cauliflower is a wonderful substitute for mashed potatoes if you are looking for fewer carbohydrates in your diet. The flavor of the cauliflower is nicely mellowed by the cheese and nutmeg.
Ingredients:
- 1 large head cauliflower
- 1/2 cup chicken broth
- 1/2 cup evaporated milk or half and half
- 1 tablespoon olive oil
- 3 ounces Boursin cheese (or other garlic and herb soft cheese)
- 1/4 cup grated Parmesan cheese
- 1/8 teaspoon grated nutmeg (optional)
- Flat-leaf (Italian) Parsley to garnish (optional)
Directions:
- Pour broth into a deep pot.
- Trim leaves and remove core from head of cauliflower.
- Place head of cauliflower in broth and drizzle with olive oil.
- Cover and bring to a boil.
- Reduce heat to medium low and simmer covered until very tender when pierced with a fork.
- Uncover and reserve 1/2 of the liquid.
- Puree cauliflower with immersion blender or in a food processor until smooth, adding the reserved liquid as needed.
- Stir in cheeses until thoroughly mixed.
- Season with salt and pepper to taste, and add nutmeg and a pat of butter and some chopped parsley, if desired.
