This is a vegetarian pasta dish full of flavor and nutrition! Roasted squash, onions, goat cheese, and pasta—what could be more satisfying? You can also serve this with grilled chicken, fish, or steak (sliced thin).

Ingredients:

  • 2 pounds of butternut squash, cubed 3/4-inch thick
  • 1 onion diced
  • 1 pound penne
  • 2 cups of reserved pasta water
  • 1 cup goat cheese
  • 1 cup chopped walnuts, pine nuts, or other nuts
  • 1 cup chopped fresh basil
  • 1/3 cup grated parmesan cheese

Directions:

  1. Heat oven to 425 degrees F.
  2. Add cubed squash and diced onions to a roasting pan and drizzle with olive oil. Salt and pepper to taste. Roast the squash for 40–45 minutes, until tender.
  3. While roasting, cook the pasta per package directions (8–10 minutes) reserving two cups of hot pasta water.
  4. Put the goat cheese into the bottom of your serving dish. Add hot un-rinsed pasta directly on top of the cheese. Add the 2 cups of hot pasta water.
  5. Stir to make a creamy sauce, then add the roasted veggies.
  6. Top with walnuts, fresh basil, and grated parmesan. Serve!
