Burrata is an Italian cheese made from mozzarella and cream. I bought my cheese at Trader Joe’s.

I was truly inspired by the winner of this year’s Master Chef, Christine Ha. Not only did she win and pull off some amazing dishes, impressing all the judges, she accomplished it blind. When asked how she accomplished cooking such amazing dishes without sight by judge Gordon Ramsay, she simply replied, “I rely heavily on my sense of taste.” Wow! There must be a few takeaway lessons in that for Christians, such as using what you do have and not focusing on what you don’t have. I’m sure there are many more.

When visiting my favorite restaurant recently, I had a salad that was amazing. Being inspired by Christine, here is what I took away from relying on my senses that day. It turned out pretty good. Thanks Christine! You inspired me to re-create using my sense of taste.

Serves 2

Dressing:

  • 1 clove garlic, finely chopped
  • 1/4 cup champagne or white vinegar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon of smoked paprika
  • 3 tablespoons honey
  • 2 or 3 dashes hot sauce (I use Cholula.)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup extra-virgin olive oil

Salad:

  • 1/2 cup cauliflower
  • 1/2 cup zucchini
  • 1/2 cup squash
  • 2 slices of thick Italian bread
  • 7 mini heirloom or cherry tomatoes
  • 1/2 cup mini cucumbers
  • 1/2 cup pickled carrots (found these at the Italian market)
  • 1 tablespoon chives
  • 1 round of burrata cheese
  • 1 bag of spinach and/or arugula

Directions:

  1. Sauté cauliflower, zucchini, squash, and the bread in 2 tablespoons of butter until browned.
  2. Mix spinach and arugula for your bed of lettuce. Arrange your veggies on your lettuce. Slice your bread into crouton-style chunks and add to salad.
  3. Slice open the burrata and arrange over the salad.
  4. Drizzle your dressing over the salad and serve.
