For the bread:

  • 3 ripe bananas
  • 2 tablespoons softened organic Earth Balance
  • 1 cup almond meal/flour (I use Bob’s Red Mill)
  • 2 eggs, whisked
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon raw honey (I like to use stevia. I use 3 packets of stevia in the raw.)

Preheat oven to 375 F. Either throw everything into a food processor (which I don’t have) or mash bananas with the Earth Balance; then add whisked eggs, followed by the remaining ingredients.

Grease a bread pan with some coconut oil. Pour the batter in and bake it for about 25–30 minutes. Cool for 10 minutes.

For the French toast:

  • 3 large eggs
  • 1 cup of half and half
  • 1/4 teaspoon salt
  • Pinch of nutmeg
  • Pinch of cinnamon

Once cool, cut your banana bread into pieces, soak them in batter (at least 30 seconds on each side) and brown them in a pan heated with melted butter or coconut oil. Add your favorite maple syrup and enjoy!
