Banana Bread French Toast Gluten Free
For the bread:
- 3 ripe bananas
- 2 tablespoons softened organic Earth Balance
- 1 cup almond meal/flour (I use Bob’s Red Mill)
- 2 eggs, whisked
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon raw honey (I like to use stevia. I use 3 packets of stevia in the raw.)
Preheat oven to 375 F. Either throw everything into a food processor (which I don’t have) or mash bananas with the Earth Balance; then add whisked eggs, followed by the remaining ingredients.
Grease a bread pan with some coconut oil. Pour the batter in and bake it for about 25–30 minutes. Cool for 10 minutes.
For the French toast:
- 3 large eggs
- 1 cup of half and half
- 1/4 teaspoon salt
- Pinch of nutmeg
- Pinch of cinnamon
Once cool, cut your banana bread into pieces, soak them in batter (at least 30 seconds on each side) and brown them in a pan heated with melted butter or coconut oil. Add your favorite maple syrup and enjoy!

Thank you. French toast is my favorite breakfast request. Though I seldom prepare or order French Toast because of the high gluten level, sugar and high calorie count. One of my New Year's goal is to begin eating gluten free. I truly appreciate the recipe and will try it soon. Blessings to you.

I love French toast and I do not have a gluten problem, so I am considering using my own home made "Apple" banana bread for the French toast. The bananas usually come from my Apple Banana trees here in Hawaii, so I am truly blessed to have this wonderful fruit growing in my own back yard. Thanks for the recipe, I am going to give it a try with my adaptation. I also use sugar free syrup for my French toast.

Thank you for posting a GF recipe. My adult kids & I were diagnosed with Celiac Disease over 6 years ago. It is sooo nice to see more GF options all the time. Looks yummy! I can't wait to try it!!!

A big Thank You for this delicious recipe. I have Celiac Disease with other food allergies and have a hard time finding a bread recipe. I use soy free Earth Balance at home also, it is very tasty. I plan to ask my sons to prepare this for Mother's Day breakfast. YUM!!!!!!!!!
