This tart is delicious served at room temperature, so it is ideal for brunch. Or enjoy it for a light dinner with your favorite greens. You can also make individual tarts by cutting the pastry dough into eight pieces before baking.

Ingredients:

  • 1 sheet of puff pastry
  • 1 lb. asparagus, with the tough ends trimmed
  • 1 tablespoon olive oil
  • Salt to taste
  • 1 egg, lightly beaten
  • 1/3 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • Fresh ground pepper to taste
  • 1/4 cup freshly grated nutmeg or ground nutmeg
  • 3 ounces of goat cheese

Directions:

  1. Preheat oven to 400 degrees F.
  2. On parchment paper, lightly roll out one sheet of pastry. You can bake on the parchment paper or you can roll out on a tart pan.
  3. On a separate baking sheet, arrange the asparagus in a single layer. Toss with olive oil and season with salt. Roast until tender, about 20 minutes. Let cool completely. Reduce the oven temperature to 375 F.
  4. In a large bowl, whisk egg, cream, parmesan, salt, pepper, nutmeg, and half of the goat cheese.
  5. Pour onto the cooled tart shell. Arrange the asparagus spears lengthwise across the tart and sprinkle with the remaining goat cheese.
  6. Bake until the tart is golden around the edges and a knife inserted into the center comes out clean (approximately 25 minutes).
  7. Let cool for 10 minutes or serve at room temperature.
