Asparagus and Goat Cheese Tart
This tart is delicious served at room temperature, so it is ideal for brunch. Or enjoy it for a light dinner with your favorite greens. You can also make individual tarts by cutting the pastry dough into eight pieces before baking.
Ingredients:
- 1 sheet of puff pastry
- 1 lb. asparagus, with the tough ends trimmed
- 1 tablespoon olive oil
- Salt to taste
- 1 egg, lightly beaten
- 1/3 cup heavy cream
- 1/4 cup grated parmesan cheese
- Fresh ground pepper to taste
- 1/4 cup freshly grated nutmeg or ground nutmeg
- 3 ounces of goat cheese
Directions:
- Preheat oven to 400 degrees F.
- On parchment paper, lightly roll out one sheet of pastry. You can bake on the parchment paper or you can roll out on a tart pan.
- On a separate baking sheet, arrange the asparagus in a single layer. Toss with olive oil and season with salt. Roast until tender, about 20 minutes. Let cool completely. Reduce the oven temperature to 375 F.
- In a large bowl, whisk egg, cream, parmesan, salt, pepper, nutmeg, and half of the goat cheese.
- Pour onto the cooled tart shell. Arrange the asparagus spears lengthwise across the tart and sprinkle with the remaining goat cheese.
- Bake until the tart is golden around the edges and a knife inserted into the center comes out clean (approximately 25 minutes).
- Let cool for 10 minutes or serve at room temperature.
