Black and White Pizza
This is a simple recipe that can be prepared in a pinch. With just a few fresh ingredients, this pizza can be made anytime with a flavorful outcome. Watch out, though, the jalapenos can pack a little heat!
Ingredients
- Pizza dough (I like the whole wheat version from Trader Joe’s) or 1 pre-baked pizza crust (12-inch)
- 1 tablespoon of extra virgin olive oil
- 1 cup of prepared Alfredo sauce
- 1/2 clove of garlic, minced
- 1 (6-ounce) package of frozen ready-to-eat chicken breast strips, thawed (Trader Joe’s sells a version of this, called “Just Chicken”)
- 1/2 cup of canned black beans, drained
- 1 (6-ounce) package of shredded mozzarella cheese
- 2 sliced jalapeno peppers (for less heat, remove the seeds from the peppers before chopping them)
- 1 palmful of cilantro
Directions
- If you are using pizza dough, follow the directions on the package to form the cooked pizza dough, and then bake.
- Preheat the oven to 450 degrees.
- Heat the olive oil in a skillet over medium-low heat. Add garlic, and cook until just fragrant. Add chicken strips, and cook until the chicken is heated through.
- Spread Alfredo sauce over the pizza crust, and sprinkle on some of the shredded cheese. Arrange chicken strips and garlic over the cheese, and put on as many black beans as you like. Place jalapeno slices on top, then cover with remaining cheese.
- Place the pizza directly on the oven rack. Bake for 15 minutes in the preheated oven, or until the crust is crispy and cheese is melted.
- Garnish with a sprinkle of cilantro.
