Blueberry Mint Lemonade
Blueberry Mint Lemonade quite honestly, is one of the most refreshingly delicious drinks I have ever tasted. You won’t believe how the flavors of mint, lemon and blueberry combine to make your taste buds tingle. Serve this as an unexpected weekday treat to your husband or kids when they walk in the door from a trying day at work or school. They will love you for it! And if you are a single girl . . . treat yourself!
Blueberry Mint Lemonade
Ingredients:
- 1 pint of blueberries
- 3/4 cup of fresh lemon juice, plus slices for garnish
- 1-1/2 cups of mint syrup (see below for directions)
- Mint sprigs, for garnish
Directions:
- Place blueberries and lemon juice in a food processor and puree completely.
- Pass puree through a fine sieve into a bowl and discard the pulp.
- Transfer juice to a large pitcher.
- Add cooled mint syrup (1 cup first, then additional syrup to taste) and 2 cups of cold water and stir to combine.
- Fill a pitcher with mixture and ice, and garnish with blueberries, lemon slices, and mint sprigs. Serve.
Mint Syrup
Ingredients:
- 1 cup of water
- 1 cup of sugar
- 2 handfuls of fresh mint
Directions:
- Mix water with sugar in a small saucepan.
- Bring to a boil and stir until sugar melts (approximately 30-60 seconds).
- Remove saucepan from heat and add mint.
- Allow syrup to cool for 30–60 minutes.
- Remove mint from syrup and discard.
- Cover syrup and place in refrigerator until cold.
Makes 6 servings
By the way, don’t hesitate to try substituting frozen blueberries for fresh ones, just be sure you defrost them a bit before pureeing them or it may be difficult to pass the pulp through the sieve. It was a big hit with the entire crew that came over to our house as we filmed and photographed the latest projects for the Virtue site.
